chocolate brownies

Last weekend, we held a joint birthday party for TBnJ. For the party, J wanted her traditional vanilla cupcakes, T wanted carrot cake, and B wanted chocolate. He decorated the cake himself, pictured below. I have no idea what that creature is, but it's a Star Wars figurine of some sort.

I *finally* found a chocolate brownie/cake recipe that works really well after we tinkered with it a bit. We made it entirely organic, of course.


Chocolate Brownies

1.5 cup palm shortening
2.5 cup sugar
2 teaspoon vanilla
6 eggs
1/2 t salt
1.5 cup all-purpose flour
1 cup cocoa powder

Preheat oven to 350 deg F. Oil the bottom of a13 x 9 in cake pan. Melt the palm shortening. Beat eggs with sugar, and add vanilla, flour, cocoa, salt and palm shortening. Bake at 350 degrees until a toothpick inserted in center comes out clean, approximately 30 minutes. After cooled, frost with chocolate frosting.


Chocolate Frosting

1/3 cup palm shortening
1T canola oil
1/3 c cocoa powder (I used Oh! Alaska)
2 c powdered sugar
1.5 t vanilla
Approximately 2T rice milk (or other “milk” of your choice)

Beat all ingredients together with an electric mixer. Will ice a 13x9 cake.
