refrigerator pickles

This is another recipe that I'm the only one in the family who eats it. OH WELL. More for me. I love these pickles. I can make them 100% organic which the "organic" pickles from Cascadian Farms aren't.

Refrigerator pickles

1-2 cucumbers
1 small onion
1 hot pepper or a bunch of green pepper slices
5-10 peppercorns
2-3 tsp of sea salt
fresh dill
white vinegar
water

Slice cucumbers into spears or rounds. Place in a 4 cup (quart) wide mouth mason jar. Place in a few rings of sliced onion save the rest for another meal). Place in several sprigs of fresh dill about 1/2 a small bunch. Cut the hot pepper in half and stick in as much as you think you can handle. Drop in a few peppercorns. Fill the space in the container 2/3 full with white vinegar. Add water to top it off. Cover and leave in the refrigerator for 48 hours. Eat within a couple of weeks (though mine don't last more than a couple of days!).
