Crockpot Italian Meatloaf
And while it seems like it should feed about eight people since it's two pounds of meat, it barely feeds four. It's that good.

Crockpot Italian Meatloaf
INGREDIENTS:
2 pounds extra lean ground beef***
2 cups soft bread crumbs, loosely packed
1/2 cup spaghetti sauce, your favorite
2 tablespoons dried chopped onion or 1/4 cup finely minced onion
1 1/2 teaspoons salt
1 teaspoon garlic powder
1/2 teaspoon dried Italian herbs, crushed, or use a mixture of oregano and basil
1/4 teaspoon pepper
3 tablespoons spaghetti sauce
PREPARATION:
In a large bowl, mix ground beef with bread crumbs, 1/2 cup spaghetti sauce, onion, salt, garlic powder, Italian herbs, and pepper until well blended. Shape into the bottom of the crockpot in a round flat circle. It will shrink away from the walls of the crockpot, so you can just smoosh the mixture up to them. Spread 3 tablespoons spaghetti sauce over the loaf.
Cover and cook on on LOW for 7 hours.
Cut into wedges and serve. Serves 4.
***We made this with 95% beef and it came out too dry. It was great with 91% though that left quite a bit of oily runoff in the bottom of the pot. The trade-off is necessary for the taste!
