Filling Ingredients
3/4 cup sucanat
1/2 cup water
2 cups fresh or frozen cranberries
1/4 cup orange juice
1 tablespoon grated orange peel
1/2 teaspoon ground cinnamon
1/4 teaspoon salt
1 cup chopped walnuts (optional)
Crust Ingredients
2.5 cups whole spelt flour
1/4 teaspoon salt
3/4 cup palm shortening
1/2 cup sunflower (or canola) oil
3/4 cup applesauce
1 cup sucanat
2.5 cups oats
In a saucepan, bring filling sucanat, water, cranberries, orange juice, orange peel, cinnamon and salt to a mild boil. Reduce heat and allow cranberries to pop; cook until the mixture thickens. This took about 15 minutes with frozen cranberries. Using an immersion blender, puree the mixture. Stir in optional walnuts and set aside.
For crust, combine the flour and salt in a bowl; cut in shortening and oil until mixture is crumbly. Add sucanat, oats, and applesauce; mix well. Spoon half into a greased 13x9x2-inch baking pan; pat firmly into pan. Spread filling evenly over crust. Top with remaining crumb mixture; pat lightly. Bake at 400° for about 25 minutes. Cut into about 24-2” squares.
