seasoned potatoes

I made these last night for dinner (but didn't get photos). I really liked them, but I think they need a bit more seasoning. T loved them. B didn't eat many of them. J rejected them outright. Grandpa and Daddy-o added jalalpeno salt to theirs but ate them happily. I will probably add a dash of cayenne or paprika the next time I make them.

Seasoned Potatoes

1/3 cup whole spelt/wheat flour
3/4 teaspoon salt
1/2 teaspoon dried thyme
1/2 teaspoon dried marjoram
1/8 teaspoon pepper
5 medium potatoes, peeled and cut into cubes or strips about 1/2"-1" in size
1/4 cup canola oil
1 bay leaf

In a large resealable plastic bag, combine the flour, salt, thyme, marjoram and pepper. Add potatoes; seal bag and shake to coat. Pour oil into a 13x9-inch baking dish. Add potatoes and bay leaf. Cover and bake at 450° for 20 minutes. Uncover and stir; recover bake 15-20 minutes longer or until potatoes are lightly browned and tender. Discard bay leaf.
