Daddy-o's birthday is today, but as the kids are going to a slumber party tonight, we celebrated Daddy-o's birthday last night. T was calling it "Daddy-o's unbirthday." Daddy-o decided he wanted a cherry pie for his birthday rather than a cake, so T helped me make the pie which was all organic, as usual. We started eating it at 6:30 pm last night, and by 9 am this morning, it was gone. J refused to have any, but Daddy-o ate half of it by himself. I had one small slice, and T & B ate the reminder (with T eating the majority).

Daddy-o got seasons 2.0 and 2.5 of Battlestar Galactica for his birthday having received 1.0 for Christmas. B looked at them and said, "Star Wars!" Close, but not quite. Daddy-o is also getting a tent which is more of a family present since Daddy-o also gets to take the kids on a school camping trip with it.

Unbirthday Sour Cherry Pie

Filling
3 bags (6 cups) of frozen cherries
1-2.5 oz container of Organic Just Cherries
0.5 c tapioca or corn starch
0.5 t ground cinnamon

Crust
1.3 c whole spelt flour
0.5 c palm shortening
0.5 t sea salt
3-5T cold water

Topping
1 c whole spelt flour
0.5 c sucanat
about 0.5 c canola, sunflower or safflower oil


Six or more hours before preparing the pie, dump the dried cherries into a large bowl. Pull the frozen cherries out of the freezer and dump them on top of the dried cherries. Leave on the counter to defrost. When you are ready to make the pie, drain off the excess juice, saving for another recipe. Mix together all of the filling elements.

In another bowl, mix together the crust. Roll out on a floured surface and put in the bottom of a 10" pie pan.

Reusing the crust bowl, mix together the topping. Add only enough oil to make a dry, crumby mixture that forms small balls. Pour the filling into the pie crust and then spoon the topping over the fruit filling. Place the pie pan on a pizza pan. Cover loosely with aluminum foil. Bake for 45 minutes at 400 degrees. Uncover the pie, and bake for an additional 10-15 minutes at 400 until the topping is nicely browned. Watch carefully as it will go from brown to black very quickly.
