Vanilla Cupcakes Recipe
*updated because I left out the oil in the original post*
This is J's favorite cake and pretty much the only one she will eat. It is vegan. We make it organic.
Vanilla Cupcakes
1 c whole spelt (or wheat) flour
1 c white spelt (or wheat) flour
1/2 c corn or tapioca starch
1 T baking powder
1 t xanthan gum
1 t sea salt
1 t vanilla
1 c agave nectar
1/2 c canola oil
1 to 2 c oat or rice milk (or soy or cow's for non-vegan)
Mix together the dry ingredients; add in the wet ones except the "milk." Slowly add the milk until the batter gets to be the right texture. This batter is very dense and sticky due to the egg substitutes, and if you let it sit too long, it will need more milk to make it pliable again. Scoop batter into 15-18 cupcake holders or oiled cupcake tins. Bake at 350 degrees for around 15 minutes until very lightly browned.
Icing
1/4 c palm shortening
1/2 bag powdered sugar (Wholesome Sweeteners brand is vegan)
vanilla rice milk
Using an electric mixer, add in a small amount of liquid with the shortening and powdered sugar. Slowly mix on low speed and working up to high speed, adding in "milk" until the icing is the correct consistency. Let kids lick beaters. :)
The ghost above is actually a double batch. The eyes and mouth are made from dried blueberries.
