Rhubarb
I ordered some rhubarb through Greenling (http://www.austinorganicdelivery.com) for a friend who lives nearby. Daddy-o and the kids dropped it off at her house this morning. T was very worried about this. He wanted to know how we were going to make strawberry rhubarb pie for US if we gave away the rhubarb. I assured him I'd gotten two pounds, one for her and one for us.
Below is T and B's favorite recipe for strawberry rhubarb pie which is one I created to meet our allergy needs and to be more healthy than most. -E
Strawberry Rhubarb Pie
This usually does bubble over, so the pizza pan under the pie pan is very much recommended!
Ingredients:
4-5 cups chopped rhubarb
3-4 cups sliced strawberries (8 c of produce total)
1 1/3 cups sucanat
1/4 cup cornstarch
1 tbsp lemon juice or 1/2 t unbuffered Vit C crystals
1/4 tsp cinnamon
Pastry for 10" double-crust pie
Pie crusts:
2.67 c whole spelt flour
1 c palm shortening
1 t sea salt
7-8 T cold water
additional flour for rolling out dough
Procedure:
In bowl combine first 6 ingredients. On lightly floured surface roll out 1/2 of the pastry and line pie plate. Spoon in filling. Roll out top pastry. Cover and poke holes. Bake on a pizza pan at 375F for 50-60 min, or until rhubarb is tender, filling thickened, and crust done.
